Halva

About this Recipe:

Tilla: There are many halva recipes out there. This is an easy and delicious Persian recipe for halva.


Main Ingredients:

Flour: 2 cups
Oil: 1 cup
Sugar: 1-1.5 cups
Water: 1 cup
Rosewater: 1/2 cup
Saffron: a pinch
Pistachio: to decorate


Directions:

1. Heat the oil in a saucepan on medium heat. Add flour slowly and mix with the oil.

2. In a separate saucepan, bring the sugar and water to boil. Add saffron and rosewater to make a syrup.

3. Add syrup to the flour and oil mixture and blend together.

4. Spread the mixture onto serving plates and leave it to cool down for at least half an hour.

5. Decorate with pistachio before serving.

Grilled Chicken Breast and Vegetables

About this Recipe:

Navid: This is a very basic grilled chicken recipe. You can add your favorite spices and herbs to the recipe (like paprika and dried rosemary).


Main Ingredients:

Chicken breasts: 4 halves skinless boneless
Olive oil: 2+1 tbsp
Garlic: 2 cloves, finely minced
Dried thyme: 1 tsp
Fresh lemon juice: 1 tbsp
Freshly ground black pepper: 1/2-1 tsp
Salt: 1/2-1 tsp
Bell peppers: 2, sliced
Zucchini: 2, sliced

Directions:

1. Wash chicken breasts and pat dry.

2. Mix 2 tbsp olive oil, minced garlics, thyme, salt and pepper.

3. Rub the mixture over chicken breasts.

4. Drizzle 1-2 tbsp olive oil over sliced zucchini and bell peppers. Season with salt and pepper.

5. Grill chicken breasts and vegetables over medium-high heat. Do not over cook them (about 5 min on each side).

6.Sprinkle with fresh lemon juice and serve.

NavidNavid: Quick and flavorful southwestern salad that makes a great potluck dish. It is also very healthy and packed with iron, fiber and vitamin C.


Main Ingredients:

Black bean: 1 can
Corn: 1 can
Cherry tomatoes: 1 cup (or 2 medium tomatoes), diced
Fresh cilantro: 2 tbsp, chopped
Fresh lemon juice: 2-3 tbsp
Olive oil: 1-2 tbsp
Salt and black pepper: to taste
Cayenne pepper: 1/4 tsp (optional)


Directions:

1. Drain the corn and beans and rinse in cold water.

2. Mix all ingredients in a salad bowl.

3. Taste and adjust the seasoning if necessary.

Main Ingredients:

Dried Leek: 8 tbsp
Parsley: 1 bunch
Spinach: 1 bunch
Chick Peas: 1/2 can cooked (270 ml)
Romano Beans: 1/2 can cooked (270 ml)
Lentils: 1 can cooked (540 ml)
Reshteh: 2 cups (Soup noodles from Iranian stores)
Butter: 2 tbsp
Dried Mint: 2 tsp
Onion: 1 medium
Garlic: 2 cloves
Turmeric: 1 tbsp Ground
Kashk: optional (thick whey from Iranian stores)
Pepper: 1/2 tsp


Directions:

1. Cook chopped vegetables in boiling water with turmeric and pepper for 30 min on medium-high heat.

2. Add peas, beans, lentils and broken reshteh into the vegetable mixture and cook for another 15 min.

3. Slice onion and garlic into tiny pieces and saute in a skillet until golden then add dried mints and saute for 2-3 min.

4. Add butter and salt the soup.

5. Serve it with onion and mint mixture and some kashk on top of it.

Scrambled Egg and Vegetables Wrap

BuenapetitobonitaBuenapetitobonita: This is a spin-off of my Egg wrap recipe. To make this wrap as healthy as possible, reduce the amount of oil you use to cook the vegetables. WARNING: Kids must be supervised while using a knife for an issue of their safety! Enjoy!

Main Ingredients:

Eggs: 4
Onion: 1,chopped
Mushrooms: 3, sliced
Half a red pepper,diced
Ranch sauce: 1 tbsp
Salt and pepper to taste
Vegetable oil: 2-3 tbsp
Pita bread
Low fat Mayonnaise
Cheese


Directions:

1. Heat some oil in a frying pan.

2. Add 4 eggs to the pan and whisk well.

3. Season with salt and pepper or any other desired spice.

4. Cook on medium heat for about 5 minutes. Scrape the bottom of the pan constantly to prevent the egg from sticking to the pan. Set aside

5. In a separate pan, saute veggies with oil for 2-5 minutes. Season with salt and pepper.

6. Transfer veggies to the egg pan. Mix and cook for 2-3 minutes.

7. Heat up the pita bread or roast burrito bread.

8. Spread some mayo on the bread. Add egg mixture and cheese.

9. Add a little ranch sauce and serve with milk or juice. Enjoy your breakfast!

Beef Stroganoff

Main Ingredients:

Diced Beef: 1 lb
Onion: 1 medium
Butter: 1 tbsp
Oil: 1 tbsp
Mushrooms: 1/2 lb
Parsley: 1 tbsp, chopped
Potato Sticks: 2 tbsp


Sauce Ingredients:

Butter: 2 tbsp
Sour Cream: 3 tbsp
White Flour: 2 tbsp
Milk: 3/4 cup
Salt
Pepper


Directions:

1. Saute sliced mushrooms with some salt and butter until golden.

2. Meanwhile in a separate pan, saute onion.

3. Add diced beef to onion pan and fry for 2 min.

4. Add some water, salt and pepper into the pan and let the beef completely cook on medium-high heat (about 45 min).

5. To make the sauce, melt butter in a saucepan, blend in flour until smooth. Add milk, salt and pepper then heat to boil. After boiling for 1 minute, remove from the heat and stir in sour cream.

6. Blend in mushrooms, beef and the sauce.

7. Serve it with some potato sticks and chopped parsley.

NavidNavid: Bruschetta is an Italian dish made with toasts which are rubbed with garlic and topped with some olive oil. Other nice toppings for this dish are tomato and fresh mozzarella. The olive oil and balsamic vinegar marinate in this recipe makes a delicious Bruschetta.

Italian bread: 8 slices, 1 cm thickness
Romano tomatoes: 5-6 medium

Balsamic vinegar: 1 tbsp
